I love having a good breakfast and this is a delicious number from my Results with Lucy recipes. It’s so simple and gets you ready for the day ahead. I asked my nutritionist why this recipe is good for me, and it’s because of these 2 main ingredients. Bananas are a great source of potassium and vitamin B6, vitamin C and fibre.

They have also been linked to increasing feel good chemicals in the brain. And cinnamon is a great antioxidant source – as little as 1/2 of a teaspoon of cinnamon daily can have positive effects on blood sugar levels, digestion, immunity, and more. No reason why you shouldn’t try this healthy recipe. Let me know what you think.

Ingredients (serves 1)
2 eggs
1 banana
1 tsp coconut oil
1 pinch of salt
2 pinches of cinnamon (adjust to your taste)
A squeeze of honey
Handful of berries
Method
1) In a bowl, whist the eggs together with a pinch of salt and set aside
2) In a small frying pan, heat 2 tsp of coconut oil, once up to heat, slice the banana into the pan to brown ever so slightly. Sprinkle cinnamon on top of the bananas.
3) Pour the egg mix into the pan & allow the omelette to cook on one side.
4) Flip over to cook on the other side.
5) Serve when ready, adding the berries and honey on top
