These are a great way of having your pizza and eating it! These are filling and a lot less calorific than shop bought versions.  You can add lots of different vegetables as toppings to increase the nutrients in this meal.


1 courgette spiralised
1-2 garlic cloves finely chopped
30g feta cheese or mozzarella if you prefer
1-2 large tomatoes diced
1 handful of mixed olives
Fresh basil
3 tbsp olive oil

1. Heat 2 pans with a little olive oil. Add the courgetti to one pan, stirring occasionally.

2. In the other pan add your finely chopped garlic after a few minutes add the chopped tomatoes, olives & season with a pinch of sea salt & pepper.
3. After cooking the sauce for 5 minutes take off the heat stir in chopped fresh basil, diced feta & a little olive oil.
4. Pour the sauce into the courgetti add a pinch of pepper on top & serve.
